Keta Salmon is the naturally lower fat variety of Salmon species when compared to fat content found in Sockeye or King. As such, they are lighter flesh and milder taste as well, which is the perfect well-rounded Salmon cut for a lower fat, healthier diet and a preferred species amongst the majority due to the milder flavor. Because Keta Salmon has less fat and natural oils, it's also the preferred filet for grilling as it stays together better. 

From the supplier on labeling: 

The Keta is Alaskan, wild caught. They did the further processing in China where the packaging is less expensive and they can process much faster.

Whenever you do the further processing, the location that it takes place becomes the “country of origin”, however in reality it’s only where it’s processed. The flag vessel that catches and bleeds the fish are US.
