 DISCLAIMER on this product: Let us explain exactly the really cool thing you are buying here that is really hard to beat in quality or price.

You are buying the center slab of the whole belly of the pig - which is the leanest part of the pork belly. It is smoked and then cut into bacon slices.

What is important to note is that all bacon is fatty - some parts of the belly are leaner and other parts fattier. It's an animal, so besides being created in a lab and being fake, the fat to lean ratio varies in every box, along within the same belly as pigs do not get fat evenly. Some pigs run around more, some eat more, etc. Also, this IS thick-cut, but it means that you may find some slices that got oddly thin cut or  extra thick cut. It's because when it gets to the ends, they don't want to short you any of the belly and will include that odd cut at the ends that may be thicker or thinner. This is often the first slice that people see because this happens on the end of the belly most often and assume the entire box is that way and think they got the wrong product. It's hard to be perfectly planned on cutting when you get to the end and not big or small enough for every slice to be the exact same.  However, we love the fact that it's not bacon from a number of different pigs, but all from the same pig in one sliced slab of delicious pork belly for a consistent taste.

- Center cut, which means cut from the finest part of the pork belly. 

- Foodservice quality, meaning bacon made for fine restaurants, but straight to your trunk now too through the co-op! 

- FRESH, NEVER FROZEN. In fact, when you receive it, it will have been packed within in the past 2 weeks and stays fresh for 6-8 weeks before needing to freeze. 

- Since it is sold in bulk, it allows you to re-pack for the freezer exactly how you want.

1. Join a car line and stay in your vehicle. We will come to you to look up your order. Open your trunk and we will load you up. Safe, fast and easy!

2. You can send anyone to pick up your order. It does not need to be you. This allows you to work around any scheduling conflicts you may have, so you don't miss out.
